I grew up among Italian-American communities in Central New York (Chicken Riggies! Utica Greens! Tomato Pie!) and now live in Brooklyn, so I know a thing or two about Rainbow Cookies (or Neapolitan or Tricolore Cookies), the brightly hued (typically in red, white, and green for the Italian flag), three-layered, almond cake and apricot jam confection enrobed in chocolate. But the truth is, there’s a lot of not-so-good ones out there. But I can wholly vouch for Hafley Baked Rainbow Cookies, from Ryan Hafley, a passionate baker and bartender at Red Hook Tavern.
